Chicago’s North Side will see the debut of Wake ’n Bacon this summer, a brand new boozy cafe with a food and drink menu which can be completely customized with CBD add-ons. From husband and wife duo and Chicago industry veterans Gabriel Ayala (Dragonfly, SafeHouse, Blackfinn) and Sarah Ayala (Jalapeno, Dragonfly, NY Lounge), Wake ’n Bacon will open doors later this summer at the meeting point of the Lakeview and Boystown neighborhoods, appropriately located at 420 West Belmont Avenue.
DISHES + DRINKS: Channeling the co-owners’ experience in the local nightlife scene, guests can expect garnished cocktails, milkshakes and other drinks as well as morning and lunch dishes, which will be available for purchase in a counterservice setting and for grab-and-go dining. For more health conscious visitors, Wake ’n Bacon will also have a dedicated menu of gluten and dairy-free options.
THE SPACE: Wake ’n Bacon is teaming up with SPACE Architect + Planners, the group behind the designs at Big Star Wrigleyville, BLVD, Federales, Bixi, Ella Elli and more to create the cafe’s interiors. Anchoring the 2,000-square-foot restaurant will be a massive indoor tree, complete with faux branches and verdant leaves dangling from the ceiling. Accented by kaleidoscopic hues of pink and blue, Wake ‘N’ Bacon will feature an 84-seat dining room, an open concept kitchen and digital menus from which guests will order drinks and food that will be then delivered tableside.
“When Sarah and I first came up with the idea for a daytime spot with a killer cocktail and CBD program, we wanted to do something off-the-cuff that also plays off our backgrounds in Chicago’s nightlife scene,” says Co-owner Gabriel Ayala. “Everything at Wake ’n Bacon — from the vibrant, highly-cravable dishes like the Lomito Completo, an Argentine steak sandwich to our interiors, which draw inspiration from the Singapore Airport — is designed to catch your eye and keep guests craving more.”
